Pita tis Satzis is a well-liked snack or dessert in Cyprus, distinguished by its crispy outside and soft, subtly sweet the middle. Ingredients

  • 1 kg of common village wheat flour
  • 1 1/2 cup of sunflower oil
  • 2 cups of lukewarm water (approx.)
  • Olive oil
  • Honey
  • Sugar
  • Cinnamon

Cooking Instructions

  1. Sift the flour, then add the oil and use your hands to knead the mixture until all the flour is moistened.
  2. Gradually add the lukewarm water, little by little, until you achieve a soft dough. Cover the dough and let it rest for half an hour.
  3. Once rested, cut the dough into long rolls and then divide them into equal pieces. Take each piece, turn it on its side, and roll it out using a rolling pin into a pita (ensure it’s not too thick or too thin). Brush each pita with olive oil using a brush.
  4. Place a bit of honey in a circle in the middle of the pita and sprinkle 1/2 teaspoon of sugar all over. Then, sprinkle some cinnamon to finish the filling.
  5. Fold the pita like an envelope by folding one side first, then the opposite side, and finally folding in the edges.
  6. Heat a non-stick frying pan (without any oil), and place the pita in it. Let it crisp up on one side, then flip it over. If necessary, flip it again until it's crisp on both sides.
  7. Once both sides are golden and crispy, the pita is ready to eat! Enjoy it warm or cold. If you make extra, you can even freeze them for later.
  8. This dough can be used to make various kinds of pites. Some people prefer only olive oil, while others add cinnamon, sugar, or even Nutella. Be cautious when cooking, as some honey might spill out and caramelize, which could burn. Wipe the pan with paper towels between pites if needed.
