In Cyprus, when the air turns chilly, there's a beloved tradition that warms every household, Avgolemono. Ingredients

  • 1 whole small chicken, washed
  • 1 cup uncooked short-grain white rice
  • 2 chicken bouillon cubes
  • 1/3 cup finely chopped celery leaves
  • 2 large farm eggs, at room temperature
  • Juice of 2 fresh lemons
  • 1 tsp salt
  • 1 tsp fresh ground black pepper

Cooking Instructions

  1. Begin by giving the chicken a good rinse and placing it in a sizable soup pot.
  2. Fill the pot with water, enough to just cover the chicken, and bring it to a rolling boil, skimming off any excess chicken fat that surfaces.
  3. Once the water is boiling, reduce the heat to medium-low and let it simmer for a patient 45 minutes, until the chicken is tender and easily pulls away from the bones.
  4. With the chicken done, transfer it to a large bowl to cool, leaving the flavorful broth in the pot.
  5. Introduce the rice, 2 cups of hot water, celery, and the bouillon cubes to the pot. Turn off the heat and cover, allowing the rice to absorb the rich flavors.
  6. While the rice mingles with the broth, remove the bones and skin from the cooled chicken, shredding the meat and adding it back to the pot.
  7. In a separate bowl, whisk together the eggs and lemon juice. Slowly incorporate a ladle full of hot broth into the egg mixture to prevent curdling. Gradually whisk in more broth until the egg mixture is warmed.
  8. Pour the egg mixture back into the pot, whisking briskly. Turn the heat to medium and let the soup cook until the rice softens, approximately 5-6 minutes. Cover with a lid and let it stand for 10 minutes to thicken slightly.
  9. Season with salt and pepper, ensuring the flavors are just right.
