Avgolemono recipe: Cyprus' beloved comfort soup

- 1 tsp fresh ground black pepper
Cooking Instructions
- Begin by giving the chicken a good rinse and placing it in a sizable soup pot.
- Fill the pot with water, enough to just cover the chicken, and bring it to a rolling boil, skimming off any excess chicken fat that surfaces.
- Once the water is boiling, reduce the heat to medium-low and let it simmer for a patient 45 minutes, until the chicken is tender and easily pulls away from the bones.
- With the chicken done, transfer it to a large bowl to cool, leaving the flavorful broth in the pot.
- Introduce the rice, 2 cups of hot water, celery, and the bouillon cubes to the pot. Turn off the heat and cover, allowing the rice to absorb the rich flavors.
- While the rice mingles with the broth, remove the bones and skin from the cooled chicken, shredding the meat and adding it back to the pot.
